Taste it like this
The blue glass
The official panel tastes from a blue glass, so colour cannot sway the verdict. At home any small glass will do: two fingers is plenty.
Warm it in your hand
Cover the glass with your palm and roll it in the other hand until it nears 28 °C. That is the temperature at which the aromas open.
The slurp
Draw the oil in with air, loudly and without shame. The burn in your throat is polyphenols — the sign of a living oil, not a flaw.
The estate
Herdade do Lagar Velho stretches across 140 hectares of schist and clay between Moura and Safara, inside the "Azeites de Moura" PDO. Each variety has its role — and its own ground.

The Portuguese variety par excellence. It gives a golden, gentle oil of almond and ripe apple — the backbone of our Colheita, as it was in grandfather’s day.

Picked early, still green, it brings leaf, fresh-cut grass and a cool finish. There is little of it — but it is what makes the Primeira Prensa sing.

The 1957 mill
My grandfather Joaquim used to take his olives to the village mill and always came home with the same complaint: the queue. Olives sitting in sacks are oil going to waste. In 1957 he sold two yokes of oxen, bought a press in Elvas and set it up in the barn. From that day on, this house’s olives never waited again.
Today the press is a continuous two-phase line and stainless steel has taken the place of stone — but his rule is still hand-painted on the wall: no olive waits more than three hours. In the 2025 harvest, the average was two hours and forty minutes.
